A visit to the Farmers Market in Cubao left him amazed at the abundance of fresh produce, live seafood, and vibrant spices. “The freshness is incredible! From the live squid to the shellfish—it’s all about the ingredients, and you have some of the best in the world,” Ramsay said.


This passion for local ingredients is evident in his adaptation of classic dishes. For example, Ramsay reimagined his signature Fish and Chips using the Filipino lapu-lapu, giving the iconic dish a uniquely Filipino twist.

Ramsay applauded the creativity of Filipino chefs who are pushing boundaries while staying rooted in tradition. He praised dishes like sisig tacos, which transform the crispy parts of the pig into a flavorful taco filling, and bone marrow luges caramelized with vodka, showcasing Filipino cuisine's ability to innovate while honoring its heritage.


“What’s key is to take the basic food from all generations and evolve it, while respecting the DNA of the ingredients,” Ramsay emphasized.

In Australia, Chef Ross Magnaye of Seria is gaining acclaim for reimagining Filipino dishes, while in the United States, chefs like Nicole Cabrera Mills are introducing Filipino-inspired flavors to global audiences. Ramsay himself acknowledged this global rise, saying, “London and Melbourne are awash with amazing Filipino chefs. Recently, another top restaurant in Australia is Filipino, and it’s here to stay.”
