You’ll want to start by cutting and peeling the potatoes into chunks. You’ll then place the potatoes in the pressure cooker along with the cup of water. Put on the lid, secure, and let the cooker do its job for about 6 minutes. After6 minutes, you’ll want to add in the butter, milk, salt, and pepper and mix. You can mix right there in the pot to save yourself a bit more time on prep and clean up. So simple and tasty that this dish will be an instant go-to on those hectic nights.
Yellow Rice With Peas And Corn
There is nothing like stopping and picking up some Chinese on the way home. The only problem is, you can’t do this every night, and if you did it would get rather expensive. While this dish might not be authentic Chinese or even have a slight hint of Oriental, it will satisfy your taste buds and desire for Chinese. Yellow rice with peas and corn is something that you can never go wrong with. The key here is to give the rice a really good rinse before cooking it. This will ensure that it gets super fluffy and delicious right down to the last drop.
To start this dish, you are going to need 2 cups of basmati rice, 2 tablespoons of olive oil, 1 onion,1/4 teaspoon of salt, 3 tablespoons of cilantro stalks, 2 large cloves of garlic, 1 teaspoon of turmeric powder, 1 cup of corn, 1 cup of peas, and 2 cups of chicken stock. Start by rinsing the rice in cold water at least 4 times. This will remove as much of the starch as possible, so you get that end fluffy taste and look. Set the pot to saute throw in your oil, onions, salt, and cook for 5 minutes.
After the 5 minutes, go ahead and add the cilantro, garlic, and turmeric powder while stirring occasionally. After a few minutes of stirring and settling go ahead and throw in the peas and corn along with the rest of the ingredients. Place the lid, lock, and cook on high pressure for a maximum of 7 minutes. When the timer goes off, you’ll have a dish that is so tasty you’ll enjoy it right down to the very last drop.
Baked Potatoes
Got some potatoes leftover from that mashed potato recipe? Maybe you just have an insatiable desire for potatoes. That would be completely understandable and there has never been a more fun way to turn your favorite meal into a unique one with a plethora of toppings, of your choosing. This baked potato recipe will create potatoes that look and taste so good that they could be professionally served. And, it’s so easy that the entire process will take less than 10 minutes. All you really need to get started is 8 to 10 medium-sized potatoes, 1 ½ cups of water, and all the dressings you want. This could include anything from butter to bacon bits, cheese, sour cream, Brockley, celery, or pretty much whatever your heart desires.
Start by washing the potatoes really well, prick them all over with a fork, place them in the steamer basket if you have one, put them in the instant pot, add the water, replace the lid, and let the cooker do its thing for a good 8 to 10 minutes. When done, let the pressure release and you’ll have your potatoes ready to be served and dressed up in any manner you desire.
Creamy Mac And Cheese
When you read creamy mac and cheese, you’d better believe it. Creamy goodness is what you are going to get with this recipe. You’ll never look at mac and cheese the same again. To get started you are going to need 1 pound of elbow macaroni, 4 cups of cold water, 4 tablespoons of unsalted butter, 14 ounces of sharp cheddar, 6 ounces of mild cheddar, kosher salt, 2 beaten eggs, 12 ounces of evaporated milk, 1 teaspoon of ground mustard, and 1 teaspoon of hot sauce.
Start by beating the two eggs into a separate bowl with the ground mustard and evaporated milk. You can actually do this step while you let the pasta cook in the pressure cooker. Simply put the macaroni in the cooker with the water and let it cook on high for about 4 minutes. While doing that, you can beat the eggs in a separate bowl with the evaporated milk. When this is done, you can go ahead and place all the ingredients into the pressure cooker with the pasta, stirring on occasion. Let the cooker cook on medium heat for a few more minutes and before long your dish will be ready to serve and feast on.
